Tasmanian pepperberry tickles the nose. Cardamom and cassia bring spice and warmth to the palate as the sweetness of angelica smooths and balances the spirit. To end on a high note, bright citrus aromas usher in a dry, classically juniper-forward finish.

Each barrel imparts the flavor on a different timetable, and in order to achieve the perfect balance, I monitor the aging process on a monthly basis and determine by taste the best time for extraction.”

Special Releases
McCarthy’s Single Barrel Big Gin
We make gin for ginners and adventurous drinkers alike. Our newest release is no exception.
We’ve partnered with Clear Creek Distillery, makers of McCarthy’s Oregon Single Malt Whiskey. This limited bottling melds the hardy flavors of juniper and spice with the savory taste of peat and toasted Oregon Oak to cast a spell on your palate. The result is a mature and mysterious spirit which can be relished in a cocktail, or for the daring, consumed neat. This limited release is available exclusively in our tasting room.
Tasting Notes
Aromas of lemon balm, black tea and salted caramel are complemented with hints of peat and juniper on the nose. Characters of pine, baker’s chocolate, and orange citrus lead to a smoked ancho chili and molé-ish finish on the palate.
Barrel reserve big gin
Some Bourbon Barreled Big Gin is more mature than the rest - we call these select barrels our Barrel Reserve Big Gin. Orange, honey, fennel, juniper, and racy spice notes all wrapped up in a Cashmere blanket make this spirit best enjoyed neat or on the rocks. At 52.75% ABV, Barrel Reserve Big Gin is a delightfully rich and complex spirit aged for at least three years in the same barrels that bring you Bourbon Barreled Big Gin.
Tasting Notes
Orange, cassia, and earthy juniper mingle with crème brûlée, caramel and lemon balm on the nose. Bright citrus followed by notes of cedar, chocolate-orange, and peppercorn. Ending with soft cardamom on the palate.
